Food in Mizoram
, one of the seven north eastern states of Assam has its own form of unique cuisine. The aura, the look the taste of Mizo food is sure to tickle the taste buds leaving one craving for more. Vegetables occupy a very important place in Mizo cuisine. In all of its dishes, vegetables are inevitable. Mizo cuisine is less spicier and a lot less masala is used in comparison with other Indian dishes such as Punjabi, Gujarati or south Indian. Spices mainly used are ginger, garlic, chilli and some other local herbs.
Mizoram Non-vegetarian Cuisines
Mizo people are ardent fans of meat. They consume different forms of meat such as pork, beef, chicken, duck, lamb, etc. Pork is a very important part of their food menu. The pork is made by the mizos in various ways ranging from boil to fry to smoked. The essence of the pork once they are cooked is inexplicable. A very delectable dish made out of smoked pork is Vawksa Rep. other dishes made out of pork are Arsa Buhchiar and Sawchair.
Mizos try using as less as oil as possible. The only oil they use is mustard oil. They primarily try to make the dishes in a boiled or steamed manner. They serve their non vegetarian dishes in banana leaves which is rather a culture there.
Bai is a Mizo cuisine made of pork, spinach and bamboo shoots. Bamboo shoots is a very popular ingredient used in mizo cuisines. The smell of cooked bamboo shoot is something they go crazy for. Spinach is again another green which is vastly used by the mizos in ther dishes.
This is another mouth watering dish where the main component is the chicken. Chicken is at first taken in whole and then roasted in an open fire. After that it is taken out of the fire and then mixed with local herbs and sticky rice and made into a delicious meal.
It is smoked pork which is flavored with herbs turning the pork into a dish worth dying for. The pieces of pork are beautiful cubes which melts in the mouth.
This is another ethnic Mizo dish made from pork or chicken accompanied by rice.
Misa Maas poora
This is a special shrimp dish where the shrimps and soon after that vegetables are added and then served with rice.
Roast curry made after roasting the duck in grills locally made by the Mizos. The curry is a delicious mixture of different spices and local herbs.
Made from tamarind and flaked fish, this is a special Mizo dish which is loved by the people purely due to its essence. The fish gives it a taste incomparable to any other.
Mizoram Vegetarian Cuisines
Vegetables, as has been already said comprises of a very important part of Mizo cuisine. All food is accompanied by different vegetables such as cabbage, potato, carrot, beans, etc. Furthermore, food here is served in banana leaves which always give the food a better and tastier aroma. Rice is imperative here and a staple food. There is also sticky rice which is a special here not only in Mizoram
but also in all of north east. Bamboo shoot is used ferociously in all of its vegetarian dishes as well in order to enhance its aroma.
Paanch Phoran Tarka
Purely a vegetarian delicacy, this dish is made up of vegetables such as pumpkin, potatoes, brinjal amongst others. Added with different spices and vegetables, Paanch Phran tarka is mouth watering.
Bamboo shoot fry
This is another delicacy which is very easy to cook simply by frying grind bamboo adding along different spices to make the taste better than the best.
Mizoram Dessert and Drinks
The mizo people do not have any form of sweet dish but just one special cake made of banana. Known as Koat Pitha, the main ingredients of this special cake are bananas, jaggery and rice flour.
Wine is a specialty amongst the people for it is in the culture of the people to have wine together all family and friends affairs. The wine made of fruits and rice beer here is made in almost every household using a local herb and rice and fruits. Festivals witness the consumption of the local liquor in all families. Another very popular drink here is ‘Zu’ which is a kind of local tea prepared by the people here. Mizo people are also very fond of smoking.
